Banana Oat Muffins


It rained so much. It feels like it has been raining for weeks. Rain, rain, rain, rain, rain. Chilling air, wet umbrellas, damp smell, damp clothes. But it is officially spring in Vancouver now. You can sense it in the air, which has shifted and no longer carries an icy tone. 

Today is Friday, and I've got a cold, probably from all that rain and chill, and my legs are aching from running too hard in PE class, but I made banana oatmeal muffins because well, a person got to have something to do, and I mean something they like doing. Plus I was rummaging around for something to eat and there was nothing, so one hour later there I was with a panful of muffins. Weekend muffins. 

They turned out great. 

The muffin itself is very soft and moist inside, while the surface shell is crunchy from the brown sugar and oats. My grandpa ate three of these in a row. He said they were really good, plus my grandpa is very particular about healthy foods. And these muffins are healthy, I mean you can just eat them for breakfast. 

Now I'm really tired so I'm going to go to sleep! After I post the recipe, of course. Hope you like the recipe~

Banana Oatmeal Muffins

Ingredients

FOR THE MUFFINS

-1 egg -3 large ripe bananas -115g melted butter -1 1/2 cups all-purpose flour -1/2 cup white granulated sugar -1 tsp. baking powder -1 tsp. baking soda -pinch of salt -1 tsp. cinnamon

FOR THE TOPPPING 

30g. melted butter -1/4 cup light brown sugar -2 tbsp. all-purpose flour -1/3 cup quick-cooking oats

Steps

TOPPING

1. Place all topping ingredients into a bowl and rub with your fingers until a crumbly oaty substance forms. 

MUFFINS

1. Line a 12-hole muffin pan with muffin liners.

2. Sift together the flour, sugar, baking powder, baking soda, salt, and cinnamon. Give it a good whisk. 

3. Mash the bananas with a fork until smooth.

Preheat your oven at this point to 390 degrees F. 

4. In a large bowl, whisk together the mashed banana, egg, and melted butter until thoroughly incorporated.

5. Add the dry ingredients to the wet and fold with a spatula just until incorporated.

6. Divide the batter among the 12 muffin holes.

8. Sprinkle the topping evenly over the muffins.

9. Bake for about 20 minutes until golden brown and a toothpick inserted into the center comes out clean. 

Enjoy with milk!
