Coffee Almond Scones
Espresso almond scones studded with chocolate chips. Delicious!
INGREDIENTS
¾ cup whipping cream, plus additional for brushing
1 tablespoon instant coffee powder
2 cups all-purpose flour
¾ teaspoon salt
1 tablespoon baking powder
¼ cup sugar
115g unsalted butter, cold and chopped
1 cup chopped unsalted almonds
1 cup semi-sweet chocolate chips
INSTRUCTIONS
1. Stir together the whipping cream and espresso powder.
2. Whisk together the flour, salt, baking powder, and sugar. Cut the mixture until the largest bit of butter is the size of a pea.
3. Stir in the almonds and chocolate chips.
4. Pour in the espresso cream and stir into the dry ingredients until incorporated. Add 2-3 more tbsp of cream if mixture is too dry.
5. Divide the dough into two rounds and pat them into disks. Slice out eight portions from each.
6. Brush with cream, and stick them in the fridge until firm.
7. Bake in the oven at 400 degrees F for 25 minutes.
