Apple Crumble Pound Cake
I decided to make apple crumble pound cake today because there were some apples in the kitchen, about to go bad. I've actually made this pound cake a few times before, and it turned out delicious every single time. The crust is so crumbly, the inside is soft (and obviously tastes like apple), and the walnuts gives it a great finishing touch. My family likes this pound cake a lot. :)

Apple Crumble Pound Cake
Ingredients
FOR THE BATTER
-200g room temp. butter
-160g sugar
-4 room temp. eggs
-200g all-purpose flour
-1 tsp baking powder
FOR THE APPLE FILLING
-200g of apples, peeled, cored, and chopped into small cubes.
-15g butter
-2 tbsp. sugar
-1/4 tsp cinnamon
-2/3 cup of chopped walnuts
FOR THE CRUMBLE TOPPING
-12 g butter
-12g sugar
-12g all-purpose flour
-12g almond flour (I just use ground almonds)
Instructions:
FOR THE FILLING
1. Put the butter in a deep frying pan (on the stove) and melt it on medium heat.
2. Add the cubed apples and fry for 1 minute, stirring occasionally.
3. Add the sugar and fry for 5 more minutes. Most of the liquid should have evaporated and the apple cubes should be mushy.
4. Turn off the heat and add the cinnamon. Stir it in. Add the walnuts and stir it in. Transfer the filling onto a plate to cool.
FOR THE CRUMBLE
1. Put all the ingredients (for the crumble) into a food processor and pulse it about 5 times. If you do it too much it will come together to form a dough. Your finished crumble topping should be coarse and crumbly.
FOR THE BATTER
1. Preaheat your oven to 180 degrees Celsius at this point. Line your loaf pan with parchment paper.
2. Put the butter into a large bowl and beat with a hand mixer until it is creamy.
3. Put the sugar in, dividing it into three additions. Beat with your hand mixer between each addition.
4. Put the eggs in, one by one, and beat for one minute between each. Your finished mixture should be fairly creamy.
5. Sift the baking powder and flour together and put it into the egg mixture. Fold it in with a spatula. Do not overmix!
ASSEMBLING
1. Put the filling in and fold it in.
2. Pour the batter into your prepared loaf pan and with your spatula make the center part of the batter slightly deeper than the sides. This is because the middle will puff up a lot.
3. Sprinkle your crumble on top.
4. Put the pan into the preheated oven and bake for 15 minutes. Then with a knife make a slit down the middle of the loaf. This is for a pretty crack in the finished product.
5. Bake for 35 more minutes or until a toothpick inserted into the center comes out clean. You may want to cover the top of the pan with alumium foil 2/3 of the way into baking to prevent overbrowning.
