Strawberry Hand Pies

It's spring, which means strawberries are coming out! Over the past few days I was wondering what to bake with strawberries...Strawberry shortcake? Strawberries simply dipped in chocolate? Strawberry layer cake? They all sounded good, but I wanted something simple to bake, being delicious at the same time. Strawberry hand pies were just the thing!

These strawberry hand pies have a flaky pie crust with a juicy, flavorful strawberry filling. And they are even more delicious when you eat them with vanilla ice cream!

I know these look like they're bleeding. :D But that's perfectly normal for a strawberry hand pies. The juice seeps out during baking. That's why a baking pan lined with parchment paper is a good idea rather than a silicone mat. Oh, and you have to poke holes in these little pies because if you don't, they'll explode!

This recipe yields about 12-14 hand pies. I got 14. And I've got to say that these are so easy to eat, too. No utensil required. If I was going to a spring picnic, I'd take these little pies with me!

Strawberry Hand Pies

Ingredients

FOR THE PIE DOUGH

-300g all-purpose flour

-1 1/2 tbsp. sugar

-3 pinches of salt

-225g cold butter, cut into cubes

-1/2 cup + 1 tbsp ice cold water

FOR THE STRAWBERRY FILLING

-600g strawberries -4 1/2 tablespoons granulated sugar -2 tablespoons cornstarch

-2 tablespoons lemon juice

FOR OTHER THINGS -1 egg -1 tablespoon water

-some sugar for sprinkling on tops

Instructions

FOR THE PIE DOUGH:

1. Line two baking sheets with parchment paper and set aside.

2. Pulse flour, butter, sugar, and salt in a food processor until it's a coarse mixture with small pea-sized grains of butter.

3. Transfer the flour mixture to a bowl and add water. Cut the icy water in with a spatula. Then gather quickly by hand until you can't see the flour anymore. Place the dough in plastic wrap, flatten into a disk, and freeze for 30 minutes while you make the filling.

FOR THE FILLING:

1. Preheat your oven to 200 degrees Celsius

2. Wash the strawberries, hull them, and cut them into 1/2 inch pieces.

3. In a bowl, combine the chopped strawberries, sugar, lemon juice, and cornstarch and set aside. Drain out the liquid that formed.

4. Whisk together the egg and water (with a fork) to make egg wash.

5. Now it's time to get out your frozen pie dough.

6. On a floured surface, roll out the dough until it is about 1/8 inch thick. Using a 4.5 diameter bowl, cut out circles. Form any remaining dough back into a ball, roll it out and cut again. Keep doing this until you used as much dough as possible.

7. Lightly brush egg wash on the edges of each pie dough circle. Then, place about 1-2 tablespoons of the strawberry filling onto each circle. Fold one side of the dough over to make a half circle.

8. Using a floured fork, press the edges to seal. Then cut three vent holes on each pie to prevent bursting. Brush each hand pie with egg wash and sprinkle them with sugar. (You might want to put a lot of sugar here since your pie dough isn't sweetened)

9. Bake the pies in your preheated oven for 20-25 minutes until they're golden brown. Cool completely before serving. (Maybe with vanilla ice-cream!)
