Mocha Muffins
These muffins were also, like the pie crust, made before I went to Korea. And I made them in Korea again, with the same, satisfying results.
These muffins are soft, cakey, and taste like coffee. I really like coffee so I suppose that's why I like these muffins especially.
Other than being yummy, these muffins are fairly easy to make, as shown below:
Mocha Muffins (Yields 6 muffins)
Ingredients
-100g room temp. butter
-1 tsp. instant coffee powder
-100g white granulated sugar
-1/4 tsp. salt
-1 egg
-170g all-purpose flour
-1 tsp. baking powder
-80g plain yogurt
Instructions
1. Add butter to a large bowl and whisk until creamy.
2. If your coffee powder's granules are large, crush them with a soon before using. Add the coffee powder to the creamed butter. Then add sugar and salt in two additions, whisking rapidly for one mminute after each addition. Whisk an additional 3rd minute, to achieve a light and fluffy texture.
3. Add the egg and whisk rapidly for 2 minutes until softly creamy.
Preheat your oven at this point to 180 degrees C.
4. Sift in the flour and baking powder and fold it in with a spatula until almost fully incorported.
5. Add the yogurt and fold it in until fully combined. Make sure you don't overmix but mix only until everything's incorporated.
6. Spoon the batter evenly amongst 6 muffin cups.
7. Bake for 20 minutes until a toothpick inserted into the center of the muffins comes out clean.
