Banana Muffins

These banana muffins are fibre-loaded and great for breakfast. They are not very sweet, but carry a natural banana flavour. The oatmeal at the tops finish them off nicely.

Banana Muffins (Makes 12 Muffins)

Ingredients

FOR THE MUFFINS

-1 egg -3 large ripe bananas -115g melted butter -1 1/2 cups all-purpose flour -1/2 cup white granulated sugar -1 tsp. baking powder -1 tsp. baking soda -pinch of salt -1 tsp. cinnamon

FOR THE TOPPPING

-2 tbsp. melted butter -1/4 cup light brown sugar -1 tbsp. all-purpose flour -1/3 cup quick-cooking oats

Steps

1. Line a 12-hole muffin pan with muffin liners.

2. Mash the bananas with a fork until smooth.

3. In a large bowl, whisk together the mashed banana, egg, and melted butter until thoroughly incorporated.

Preheat your oven at this point to 200 degrees C.

4. In another bowl, sift together flour, sugar, baking powder, baking soda, salt, and cinnamon. Give it a good whisk.

5. Add the dry ingredients to the wet and fold with a spatula just until incorporated.

6. Divide the batter among the 12 holes.

7. For the topping, combine all the topping ingredients in a bowl by rubbing with your fingers.

8. Sprinkle the topping evenly over the muffins and bake for about 20 minutes until golden brown and a toothpick inserted into the center comes out clean.
