Dark Chocolate Cupcakes with Ermine Frosting


These dark chocolate cupcakes were delicious! They are very moist and fluffy and full of chocolate flavour, although they look a little bit black. But I paired these with ermine frosting to contrast the colour. Ermine frosting is the best frosting I've ever made. To top these cupcakes, since they are dark chocolate, I sprinkled them with dark chocolate shavings. And voila! These were also one of the best cupcakes I've ever made.

Dark Chocolate Cupcakes (Makes 12 Cupcakes)

Ingredients

-1 cup all-purpose flour

-1 cup granulated white sugar

-1/2 cup cocoa powder

-1 tsp. baking powder

-1/2 tsp. baking soda

-1/4 tsp. kosher salt

-1/2 tsp. instant coffee powder (If granules are large, crush with spoon)

-1/2 cup milk

-1/2 cup vegetable oil

-1 egg

-1/2 tsp. vanilla extract

-1/2 cup boiling water

-some dark chocolate

Instructions

1. Line your muffin tin with muffin liners.

2. In a large bowl, sift together flour, sugar, cocoa, baking powder, baking soda, salt, and instant coffee powder. Whisk this mixture with a hand-mixer at low speed then give a toss with a spatula before whisking again.

3. Add milk, vegetable oil, egg, and vanilla to the dry mixture and beat on medium speed until combined. Scrape down the sides of the bowl.

Preheat your oven at this point to 165 degrees C.

4. With the speed on low, stream in the boiling water and incorporate. Then beat on high speed for 1 minute to air the batter.

5. Spoon the thin batter evenly to the muffin holes and bake for 12-15 minutes or until a toothpick inserted to the center comes out clean.

6. Cool the cupcakes and remove them from the tin.

7. Make the ermine frosting following my recipe. Then with a potato peeler shave some dark chocolate to create chocolate shavings.

8. Place frosting into a piping bag fitted with a star tip and pipe swirls on the cupcakes. Sprinkle with the shavings.
