White Cake with Ermine Frosting


White Cake with Ermine Frosting (Makes one 8-inch 2-layer cake)

Ingredients

-2 cups all-purpose flour -2 tsp. baking powder -pinch of salt -170g butter room-temp. -1 1/2 cups white sugar -6 large egg whites room-temp. -3/4 cup whole milk room-temp. -2 tsp. vanilla extract -1 recipe of ermine frosting -sprinkles for garnish

Instructions

1. Slide a rack in the bottom part of the oven. Butter your springform pan and line with parchment paper.

2. Sift together flour, baking powder, and salt and give it a good whisk.

3. Beat the butter in a large bowl with a hand-mixer until creamy. Add the sugar in 2-3 additions and beat well after each. Beat until very pale, light, and fluffy.

4. Beat in the vanilla extract.

Preheat your oven at this point to 170 degrees C.

5. Whisk egg whites and milk together by hand in another medium bowl until homogenous and a little foamy.

6. With the mixer at lowest speed, beat in 1/4 of the flour mixture, then 1/3 of the milk mixture into the butter mixture. Repeat this proccess, starting and ending with the flour. Scrape down the sides of the bowl in between. Only beat until incorporated. A silky smooth batter should form.

7. Pour the batter into the cake pan and smooth the top with a spatula.

8. Bake for 45-50 minutes until golden brown and a toothpick inserted into the center comes out clean.

9. Make the ermine frosting for the cake.

10. Immediately remove cake from pan after baking and cool.

11. Slice the cool cake in half, spread some frosting. Add the second layer and spread frosting on the top and sides of the cake.

12. Sprinkle the sprinkles around the cake and enjoy!
