Apple Cinnamon Sugar Cake
Apple Cinnamon Sugar Cake (Makes one 8-inch cake)
Ingredients
85g room-temp. butter
1 1/2 cups self-rising cake flour
1/2 tsp. cinnamon powder
1/4 tsp. salt
Little less than 1 cup granulated white sugar
1 large room-temp. egg
1/2 cup milk
1 tsp. vanilla extract
2 large apples
TOPPING
2 tbsp. sugar
1 tsp. cinnamon powder
Instructions
1. Butter the cake pan.
2. Whisk flour, cinnamon and salt together.
3. Beat butter and sugar ( add sugar in additions), until fluffy (about 2.5 minutes).
Peel and slice the apples now.
This is optional, squeeze some drops of lemon juice over apples.
Stir together topping cinnamon and sugar with a fork.
Preheat oven at this point to 176 degrees C.
4. Add egg, milk and vanilla to batter and whisk by hand only until incorporated.
5. Add flour in thirds, folding with a spatula just until homogeneous.
6. Spread batter into pan, arrange apple slices on surface.
I made the stupid mistake of starting from the center. Start from the outer edges!
7. Bake for 10 minutes, then reduce oven temperature to 152 degrees C, and bake for another 45-60 minutes.
Toothpick should come out with a few crumbs.
