Apple Pecan Crumble Muffins
APPLE PECAN CRUMBLE MUFFINS (Makes 12)
Ingredients:
FOR THE MUFFIN BATTER
-225g self-rising cake flour
-110g granulated white sugar
-125g butter, melted
-2 large eggs
-4 tbsp. milk
-3 small green apples, peeled, cored, and cut into cubes
-125g pecans, chopped
FOR THE CRUMBLE TOPPING
-60g cold butter cut into small cubes
-120g all-purpose flour
-60g granulated white sugar
-1 tsp. cinnamon powder
Instructions:
1. Line your 12-hole muffin pan with muffin liners (I chose white).
2. Add all crumble topping ingredients into a bowl and cut them in with a scraper until the mixture becomes coarse crumbs.
3. Sift flour into a large bowl and add sugar, butter, eggs, and milk. Whisk until fully incorporated.
4. Preheat your oven at this point to 180 degrees Celsius.
5. Scoop the muffin batter into the muffin holes, distributing the batter evenly. Only use half of the batter.
6. Slightly push in the apple cubes into the muffin batter. Divide the apples evenly between the muffin holes.
7. Scoop the other half of the batter evenly on the muffin holes.
8. Layer the chopped pecans on top, and sprinkle the crumble topping on the top of that evenly. I didn't end up using all the crumble, so I used them to bake other muffins later.
9. Bake for about 40 minutes or until a toothpick inserted into the muffins comes out clean. Enjoy them warm!
