Oatmeal Cookies

These oatmeal cookies have a rich, deep flavour that is due to the dark brown sugar. They are classic oatmeal cookies with just oats and cookie. Delicious!

Oatmeal Cookies (Makes 1 dozen)

INGREDIENTS

1 1/2 cups all-purpose flour

1 1/2 cups quick-cooking rolled oats

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup room-temp. butter

1 1/4 cups dark brown sugar

1/4 cup canola oil

1 tsp. vanilla extract

1 large room-temp. egg

INSTRUCTIONS

1. Line two baking trays with parchment paper.

2. Preheat the oven to 375 degrees F.

3. In a bowl, whisk together the flour, oats, baking soda, and salt. Set aside.

4. In another bowl, cream together the butter, brown sugar, oil, and vanilla with a hand mixer.

5. Add the egg and beat until smooth.

6. Pour in the dry ingredients and cut it in with a spatula.

7. Use an ice cream scoop to scoop out balls of dough and place them on the trays, spacing them apart.

8. Press the balls slightly.

9. Bake for 12 minutes until golden brown.

Enjoy with milk!
