Potato Wedges
Don't these potato wedges look mouth-watering? You could make these as a side dish with...I don't know, roasted chicken? But I think they're great just by themselves. And very easy to make. First you wash the potatoes well and eliminate the gnarly bits.
Then you cut them into chunks.
And boil the chunks in some salt water.
Drain and lay them out onto a pan, oil and season, and bake to crispiness!
POTATO WEDGES (Makes about 23. I counted how many chunks there are in the photo above. :)
Ingredients
600g potatoes
sea salt
ground black pepper
olive oil
Instructions
1. Boil a pan of salted water.
2. Scrub and wash potatoes clean, hull out gnarly bits.
3. Slice potatoes into chunky wedges, boil for 8 minutes in salt water.
Preheat oven at this point to 200 degrees C.
4. Line a baking pan with aluminum foil.
5. Drain potatoes in a sieve, let them rest a bit.
6. Transfer to baking pan and pour olive oil, make sure all wedges are coated with it.
7. After a toss, spread the wedges out and sprinkle salt and pepper.
8. Bake for 30 minutes until crisp and golden brown.
