Pizza Pockets

Today I made pizza pockets because my brother asked me to. And they turned out delicious.

Look at the filling:

Combined with shredded mozzarella cheese!

And the filling once it's baked!

These make a great snack. And they aren't very hard either. Just bake them and enjoy them while you watch TV or something. :) This recipe yields 12 pizza pockets.

Pizza Pockets

Ingredients

FOR THE PIZZA DOUGH

-2 1/2 cups flour

- 2 1/4 tsp yeast

-1/2 tsp salt

-1 cup water

-2 tbsp. olive oil

-1 tbsp. sugar

FOR THE FILLING

-3/4 cup chopped sausage

-1 medium onion, chopped

-9 cherry tomatoes, chopped

-1/2 cup tomato paste

-1/2 tsp. thyme

-1/2 tsp. salt

-1/4 tsp. pepper

-1 1/2 cups shredded mozzarella cheese

-3 tbsp. water

FOR THE EGG WASH

-1 egg

-1 tbsp. water

Instructions

FOR THE DOUGH

1. Heat the water until warm but not hot.

2. Sift together flour and salt.

3. Add yeast and sugar to warm water and proof until foamy.

4. Add olive oil and the yeast mixture to the flour mixture. Mix with a wooden spoon. Switch to using your hands and bring the dough together.

5. Knead the dough by hand for 6-8 minutes. Stretch it, fold it over, stretch it, fold it over...knead in this way.

6. Once the dough is smooth and elastic, put it into a greased bowl, and let it rest, covered, while you make the filling.

FOR THE FILLING

1. In a frying pan, fry the onion and sausage until browned. Add the rest of the filling ingredients except the cheese and cook for 5 more minutes.

ASSEMBLING

1. First of all, for the egg wash, just whisk the egg and water together with a fork. Preheat your oven at this point to 190 degrees Celsius. Also line two baking pans with parchment paper.

2. Now, punch the resting dough to release gas. On a floured surface, roll it out until thin. With a 4.5 inch diameter bowl, cut out circles. Form excess dough back into a ball, roll it out, and cut circles again. Use as much dough as possible.

3. Place 1 spoonful of filling and 1 spoonful of shredded cheese on each circle. If there's any remaining filling or cheese, just place them on the circles of dough too.

4. Brush egg wash on the edges of each circle. Fold the circles in half, and press the opening with a fork to seal. Brush egg wash on the surfaces of the pizza pockets.

5. Bake these in your preheated oven for 30-35 minutes. Use aluminum foil to cover them if they brown too much during baking. Enjoy them while they're steaming hot!
